Start with the hazard analysis
Everything in HACCP flows from the hazard analysis. For each process step you identify the biological, chemical, physical, and allergen hazards that are reasonably likely to occur, and decide which require a control. Get this wrong and the rest of the plan protects the wrong things.
Determine your critical control points
A CCP is a step where control is essential and where you can measure and act — a cook step, a metal detector, a pH control in an acidified food. Not every control is a CCP; over-designating them buries your team in monitoring that adds no safety.
Validate, then verify
Validation answers "will this control actually work?" — often with scientific or process-authority support. Verification answers "is the control working as intended day to day?" — through record review, calibration, and testing. Auditors probe both, and confusing the two is a common finding.
HACCP and FSMA preventive controls
Under FSMA's Preventive Controls for Human Food rule, most facilities now operate a food safety plan that is broader than classic HACCP — adding process, allergen, sanitation, and supply-chain preventive controls under a Preventive Controls Qualified Individual (PCQI). If you're building a plan today, build it to satisfy both.
Common mistakes
- Generic, template-driven plans that don't match the process
- Critical limits that aren't validated
- Monitoring records completed after the fact rather than in real time
- No reassessment after a line, formula, or supplier change
